Built for the teams behind restaurant margins.
TrueCOGS Ledger exists because finance ops teams deserve better than stale spreadsheets and black-box estimates.
Our Story
Restaurant margins are thin — and the data needed to protect them is scattered across PDF invoices, vendor portals, and recipe files that drift out of date. Finance teams spend weeks reconciling costs manually, and by the time the numbers are ready, the margin has already leaked.
We built TrueCOGS Ledger to close that gap. Our costing engine ingests supplier invoices, normalizes units and pack sizes, maps vendor items to a canonical catalog, and applies yield, portion, and substitution rules to produce daily, item-level COGS and margin.
The result: finance ops and procurement leaders can see what changed, understand why, and act — reprice, rebid, or adjust specs — before silent leakage compounds across locations.
Mission & Values
Give restaurant finance teams fast, traceable margin visibility so they can make confident pricing and procurement decisions every day.
We show the math, not just the metric. Every number traces back to invoice lines, conversions, and rules — no fuzzy estimates.
The system behaves consistently. Status is always clear: what’s confirmed, what needs review, and what changed since the last export.
We minimize time-to-answer. Top movers and repricing candidates surface first. Bulk actions and keyboard-first workflows keep teams moving.
We optimize for real-world restaurant constraints — messy invoices, changing specs, and cross-team handoffs. Outputs work in your existing workflows.
How We’re Different
We focus on invoice-to-margin costing, not back-of-house operations or warehouse management.
Every cost calculation shows its inputs: invoice lines, unit conversions, yield rules, and substitution logic. Review and override at any step.
Start with your top 20–50 menu items. Expand coverage as you validate results. CSV-first workflows mean you don’t need to replace existing tools.
